Quick Keto Zucchini Stew
Very often when I cook food I’ll come up with something I haven’t done before. A small change can be enough to end up with an entirely different dish. Today for my fasting Keto lunch I just wanted to use up anything in my fridge that might go bad when I start my prolonged fast tomorrow. So rather than eating my steak dry, this was the result and it was absolutely scrumptious.
Fridge Leftovers ..
aka any yummy proteins and veggies you want to use. I used:
– Alheira Miradela – A soft and delicious Portuguese sausage, sliced
– Beef steak, sliced
– Chopped tomato
– Chopped zucchini
– Olive oil
– Balsamic glacé
Fry the meat and zucchini in olive oil. Add the rest of the ingredients and let it cook on medium heat. Add about 1/2 cup of water. Now let the ingredients cook until the water is reduced to a thick sauce. Stir occasionally so that it doesn’t stick to the bottom of the pan.
Serve with salad and/or keto bread.
